Vegetable of the Week:

Lettuce

Leaf lettuce belongs to the asteraceae family, like romaine and iceberg lettuce. Green leaf lettuce may look like romaine, but it’s actually not the same. It does, however, make a great substitute for romaine.  Leaf lettuce is soft and tender with a very mild flavor.  It’s best eaten fresh in salads or sandwiches.

History

Lettuce is a member of the sunflower family and originated from the Mediterranean region.  It was first cultivated by the ancient Egyptians, who used its leaves and seeds for food and oil.  Lettuce spread to the Greeks and Romans, who called it lactuca, the root of its English name.

Health benefits

Water makes up over 95% of raw lettuce.  As a result, eating lettuce hydrates the body.  Lettuce is also low in calories and is rich in essential vitamins and minerals, including vitamin K, vitamin A, folate, and potassium. Lettuce is also a great source of dietary fiber, aiding digestion and promoting a healthy gut. In addition, lettuce has very little fat and it can be eaten every day without problems.

 Preparing and Storing

  1. Wash: Rinse lettuce leaves under cold running water to remove any dirt or debris.  Gently pat the leaves dry with a clean towel or paper towel or use a salad spinner to remove excess water.
  2. Store: Line a container with paper towels and place the lettuce inside, covering it with another paper towel to absorb excess moisture. Alternatively, you can wrap the lettuce in a dry paper towel and place it in a plastic bag or storage container. Store lettuce in the crisper drawer of the fridge to maintain the proper temperature and moisture level.
  3. Avoid cutting lettuce: Cutting lettuce can cause it to wilt faster. Instead, tear the leaves into bite-sized pieces when you’re ready to use them
