Chickpea Apple Spinach Salad
Main Ingredients:
- 4 cups baby spinach
- 1 15-ounce can chickpeas (drained & rinsed)
- 2 ounces crumbled feta cheese (or shredded cheese of choice)
- .5 cup dried cranberries
- .5 small red onion (sliced finely, about .5 cup)
- 1 small apple (chopped, about 1 cup)
Dressing Ingredients:
- .25 cup dijon mustard (or yellow mustard)
- .25 cup honey
- .25 cup apple cider vinegar
- .25 tsp of salt
Recipe Steps:
- In a large bowl, combine all salad ingredients. Set aside.
- In a jar with tight fitting lid, combine all the dressing ingredients. Close lid and shake to combine.
- Pour dressing over the salad just before serving. Toss gently to combine.
