Kale Rice

Ingredients: 

  • 1 cup water or vegetable broth
  • 1/2 cup rice, brown or white
  • 2 small garlic cloves, minced
  • 2 cups kale, ribs removed, washed, finely chopped

Instructions:

  1. Bring water to boil in small heavy saucepan. Add rice, cover, turn to low heat.
  2. Cook for 25 minutes or until tender.
  3. Sauté garlic in oil in heavy skillet on medium heat until soft. Add kale and cook additional minutes.
  4. Fluff rice with fork, then add kale. Gently mix. Add salt and pepper to taste.
