Kale Rice
Ingredients:
- 1 cup water or vegetable broth
- 1/2 cup rice, brown or white
- 2 small garlic cloves, minced
- 2 cups kale, ribs removed, washed, finely chopped
Instructions:
- Bring water to boil in small heavy saucepan. Add rice, cover, turn to low heat.
- Cook for 25 minutes or until tender.
- Sauté garlic in oil in heavy skillet on medium heat until soft. Add kale and cook additional minutes.
- Fluff rice with fork, then add kale. Gently mix. Add salt and pepper to taste.
