• 4 tbsp butter
  • 4pounds fresh tomatoes, peeled and coarsely chopped
  • 1 large onion, cut into wedges
  • 2 tsp salt
  • 4 cloves garlic, crushed
  • .5 cup fresh basil leaves
  • 3 cups low sodium chicken or vegetable stock
  • heavy cream (opt)
  1. Melt butter in large pot or dutch oven
  2. Add remaining ingredients and simmer, uncovered, for 40 minutes, stirring occasionally.
  3. Remove from heat and puree in one of the following ways:
  4. using a handheld immersion blender, a food mill, in a standard blender or food processor.
  5. Taste and add salt if necessary.

Serve with a swirl of heavy cream on top, if desired.

SERVES 6

Notes: Do not fill a standard blender or food processor more than halfway when blending hot liquids. They will come flying out!
