- 4 tbsp butter
- 4pounds fresh tomatoes, peeled and coarsely chopped
- 1 large onion, cut into wedges
- 2 tsp salt
- 4 cloves garlic, crushed
- .5 cup fresh basil leaves
- 3 cups low sodium chicken or vegetable stock
- heavy cream (opt)
- Melt butter in large pot or dutch oven
- Add remaining ingredients and simmer, uncovered, for 40 minutes, stirring occasionally.
- Remove from heat and puree in one of the following ways:
- using a handheld immersion blender, a food mill, in a standard blender or food processor.
- Taste and add salt if necessary.
Serve with a swirl of heavy cream on top, if desired.

Notes: Do not fill a standard blender or food processor more than halfway when blending hot liquids. They will come flying out!
