Marinated Asparagus Salad
Main Ingredients:
- 1 pound fresh asparagus spears
- 1 hard-boiled egg, peeled, OR ½ cup shredded cheese
Dressing Ingredients:
- ¼ tsp dried oregano
- 1 small clove garlic, finely chopped
- ¼ tsp sugar
- ⅛ tsp salt
- ⅛ tsp ground pepper
- ¼ tsp brown mustard
- 1 Tbsp vinegar
- 4 Tbsp olive oil or other vegetable oil
Recipe Steps:
- Wash asparagus and remove tough ends.
- Cook asparagus in water for 3 minutes, until barely tender.
- Whisk first 7 dressing ingredients together. Whisk oil in slowly.
- Remove asparagus from water and place in a serving dish.
- Pour the dressing over the asparagus turning spears to cover.
- Marinate for 10 minutes
- Top with egg, or cheese.
