• 1 medium zucchini
  • oil
  • salt
  • .25 cup marina sauce
  • .5 cup shredded mozzarella
  • other toppings, see notes
  1. Preheat the oven to 400o.  Line a baking sheet with foil or parchment paper. If foil, spray with cooking spray or oil.
  2. Slice the zucchini into ¼-inch thick rounds.
  3. Place the slices on the prepared back sheet and sprinkle with salt.
  4. Top each slice with ½ tsp marinara sauce and 1 tsp mozzarella.
  5. Bake until the cheese is melted, around 8 minutes.

SERVES – makes around 20 mini pizzas

Notes: Cubed peppers or onions, crumbled bacon, pepperoni, fresh basil, or any other topping you like to include on pizza may be added.
