- 1 medium zucchini
- oil
- salt
- .25 cup marina sauce
- .5 cup shredded mozzarella
- other toppings, see notes
- Preheat the oven to 400o. Line a baking sheet with foil or parchment paper. If foil, spray with cooking spray or oil.
- Slice the zucchini into ¼-inch thick rounds.
- Place the slices on the prepared back sheet and sprinkle with salt.
- Top each slice with ½ tsp marinara sauce and 1 tsp mozzarella.
- Bake until the cheese is melted, around 8 minutes.
SERVES – makes around 20 mini pizzas
Notes: Cubed peppers or onions, crumbled bacon, pepperoni, fresh basil, or any other topping you like to include on pizza may be added.
