- 10 oz fresh spinach – use baby spinach or chop large leaves
- 1 qt strawberries, hulled and quartered
- .5 cup pecans, chopped
- .5 small red onion, very thinly sliced
- .75 cup crumbled feta cheese (optional)
POPPY SEED DRESSING
- .25 cup balsamic vinegar – may substitute cider vinegar
- .5 cup olive oil or other mild vegetable oil
- 1.5 tbsp poppy seeds
- 1.5 tbsp honey – add more to taste if using cider vinegar
- .5 tsp Dijon mustard
- .5 tsp salt
- Place sliced onions in a bowl of cold water for 30 minutes, while preparing the rest of the ingredients.
- Mix all dressing ingredients.
- Assemble all salad ingredients, including drained onions.
- Use half of the dressing to coat the salad.
- Serve remaining dressing on the side.
SERVES 6
Notes: Soaking the onions in water helps minimize the harsh flavor. Add dressing to the salad just before serving.
